Country Butter

Ingredients

  • heavy or whipping cream
  • salt, optional
  • crackers or bread

Directions

  1. Pour about 1/2" of cream into several clear containers, such as baby food jars. (Use 1" for larger jars.) Seal lids tightly.
  2. Children take turns shaking the jars. The cream will turn into whipped cream. After more shaking, butter pieces will form.
  3. Once the butter is obvious, stop shaking. Drain the buttermilk, which will taste sweeter than store-bought buttermilk.
  4. Taste the butter. Add salt, if desired. Spread butter on crackers or bread.

Sweet City Couscous

Ingredients

  • 3 cups water
  • 2 tablespoons butter or margarine
  • 2 cups couscous
  • 1 cup raisins, currants, and/or small dried fruit pieces
  • 2 tablespoons sugar
  • hot milk

Directions

  1. Bring water and butter or margarine to a boil in a medium saucepan.
  2. Remove from heat and stir in the couscous, dried fruit, and sugar.
  3. Cover the pan and let sit for 5 minutes.
  4. Have children fluff couscous with a fork.
  5. Scoop couscous into bowls; pour a little hot milk on top. Makes 16 small servings.

Variation: Omit fruit, sugar, and milk. Add chopped vegetables, if desired.

Dried Apple Rings

Ingredients

  • 6 apples, vary type if desired
  • kitchen string

Directions

  1. Wash apples, removing core, if desired. Slice apples into thin slices.
  2. Have children string the apple slices on lengths of string; hang the strings in the warmest part of the room. Make sure there is space between each slice.
  3. Check the slices daily to see results.
  4. Eat when the apple slices are dry.
