Picnic Pinwheels

Ingredients

  • 5 flour tortillas, 8" in diameter
  • 2 carrots, grated
  • sliced turkey
  • sliced cheese, optional
  • whipped cream cheese or mayonnaise
  • Options: cranberry sauce; jelly and cream cheese; other sliced meats; egg, tuna, or chicken salad; sliced meat and cream cheese rolled without bread

Directions

  1. Stack tortillas on foil. Wrap tortillas completely, and place in a 350° oven for 5 minutes. Unwrap and arrange the tortillas on a flat surface.
  2. Have children spread the tortillas with cream cheese, covering the entire surfaces.
  3. Have children add grated carrots and two slices of turkey.
  4. Children may roll the tortillas as tightly as possible, sealing the end with cream cheese if necessary.
  5. Wrap roll-ups in plastic wrap and refrigerate 1 hour. To serve, slice off the ends and slice the rollups into 1/2" slices.

Sunshine Pops

Ingredients

  • 4 cups of orange juice
  • 2 cups low-fat or fat-free vanilla yogurt
  • wooden sticks

Directions

  1. Blend the ingredients in a blender.
  2. Pour into small paper cups.
  3. Cover each cup with foil. Insert wooden stick in the center of each cup. The foil will help the stick remain upright.
  4. Freeze overnight. Peel away the paper cup before eating. Serves 12.

Spring Flower Pots

Ingredients

  • chocolate cake mix
  • 12 flat-bottomed ice-cream cones
  • chocolate frosting
  • 12 chocolate cookies
  • 12 7" twisted licorice sticks
  • gumdrops, some whole (buds), some flattened (flowers)
  • Options: Use toothpicks in place of licorice.

Directions

  1. Prepare cake mix according to package.
  2. Pour batter into ice-cream cones, filling each halfway. Bake according to package.
  3. Have children crush the chocolate cookies in a sealable plastic bag.
  4. Cool cakes. Have children frost them. They can sprinkle the cookie crumbs on top as dirt in the flowerpot. Set aside.
  5. Have children cut the licorice into two equal pieces. These are flower stems.
  6. Children can push a gumdrop (the flower) onto one end of the licorice, and then plant the flower in the cake flowerpot. Serves 12.
